Gluten Free Chicken Noodle Soup

This gluten free version of classic Chicken Noodle Soup is so satisfying any day of the week and especially for days when you are sick or run down. Don’t doubt it. It works!

Ingredients

  • 3- large chicken breasts, cooked and chopped – see recipe below
  • OR buy canned chicken (Recommended brand Costco – Kirkland signatures, chunk chicken breast)
  • 3- 32-ounce cartons chicken broth
  • 3 carrots, peeled, diced
  • 3 celery stalks, diced
  • 1 yellow onion, diced
  • 2 Tablespoon olive oil
  • 1 package gluten free spaghetti, spiral noodles (Recommended brand, Tinkyada Pasta Joy)
  • Salt and pepper to taste

Steps

In a large pot, sauté carrots, celery and onion in olive oil until vegetables are softened and onions are translucent.

Add chicken broth and noodles to carrots, celery, onion and salt and pepper. Bring to a boil and then reduce heat to a simmer.  Simmer until noodles are cooked to desired softness.  Add chicken, and gently stir in order to leave it in chunks. Taste test salt and pepper for desired flavor.

Add rice right before serving otherwise it will absorb all the broth.
