Ingredients
- 3 cups canned pumpkin (1 large can – 29 ounces)
- 2 2/3 cups sugar
- 3/4 cup canola oil
- 4 cups gluten-free flour mix – Recommended for this recipe Cup4Cup Multipurpose Flour or Namaste Foods – Perfect Gluten Free Flour Blend
- 3 teaspoon soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 2 cups chocolate chips
- Optional: 1 cup chopped walnuts
- Optional: 2 cups raisins
Steps
Pre-heat oven to 350° F . Grease 3 bread pans with oil
Combine in mixer: pumpkin, sugar and oil. Mix until combined.
Combine in separate bowl: gluten free flour, gluten free soda, cinnamon and cloves. Gradually add dry ingredients into the pumpkin mixture and mix thoroughly.
Fold in chocolate chips. Optionally: fold in nuts and/or raisins.
Bake for 40-50 minutes until toothpick inserted in the center comes out clean.
