Gluten Free Homestyle Apple Cake

Ingredients

  • 2 eggs
  • 2 cups sugar
  • 1/2 cup olive oil
  • 1 teaspoon 100% pure vanilla
  • 2 cups gluten-free flour (Recommended brands, Namaste or Cup 4 Cup)
  • 2 teaspoons baking soda
  • 2 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 4 cups apples, finely diced
  • Optional: 1 cup chopped nuts – walnuts or pecans

Steps

Preheat oven to 350° F.

Using a mixer, beat eggs and sugar until fluffy. Add oil and vanilla and beat well to combine. Combine gluten-free flour, baking soda, cinnamon and salt and mix well together but don’t overmix.  On slowest speed add apples and optional nuts into batter.  Pour into a 9 x 13 greased baking dish.

Bake for 45 minutes.

Ingredients

  • 8-ounces cream cheese, room temperature
  • 3 Tablespoons butter, softened
  • 1 teaspoon 100% pure vanilla
  • 5 cups powdered sugar
  • 3 1/2 Tablespoons milk

Steps

In mixer. beat cream cheese until smooth.  Add butter and pure vanilla mixing until combined. Gradually add powdered sugar, mixing well. Add milk until desired consistency.
