Ingredients
- 1 package pre-cut and washed salad greens
- 1 bag dried gluten free dried cranberries (Recommended brand, Craisins)
- 2 cups pumpkin seeds, roasted and salted
- 1 cup pecans, chopped
- 6 Tablespoons sugar
- ¾ cup feta cheese
Steps
Sugared pecans: Chop 1 cup pecans. Spoon pecans into a saucepan. Add sugar and stir constantly over low heat until caramelized and sugar adheres to pecans. Remove from pan and cool on plate.
Layer on flat serving dish, greens, feta cheese, pumpkin seeds, almonds and dried cranberries.
Drizzle your favorite raspberry or balsamic vinaigrette dressing on top.
