Ingredients
- 6 small chicken breasts, thawed
- 1 cube butter, melted
- 2 cups gluten free cereal, crushed (recommended Nature’s Path Envirokidz Gorilla Munch cereal)
- Salt
- Ground Pepper
Steps
Preheat oven to 350°.
Use a 9×13 baking dish, lined with parchment paper or greased on bottom and sides with oil.
Melt butter in microwave (covered dish to prevent splattering).
Crush gluten free cereal in sealed gallon sized plastic bag with rolling pin.
Dip thawed chicken in butter and coating in gluten free cereal.
Place cereal covered chicken in baking dish. Pour remaining butter over chicken breasts and salt and pepper to taste.
Bake uncovered for 1 hour until chicken is tender and cereal is golden browned. Serve with baked potatoes.
