- 3 eggs
- 2 cups sugar
- 1 cup olive oil
- 1 Tablespoon 100% pure vanilla
- 2 cups grated zucchini
- 3 cups gluten-free flour mix (Recommended brands, Namaste Perfect Flour Blend and Bob’s Red Mill 1:1)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon gluten free baking powder
- 1 Tablespoon cinnamon
- Optional: 1 cup walnuts, chopped
Steps
Pre-heat oven to 350°F.
In mixer, beat eggs, sugar, oil and vanilla until smooth. In a separate small bowl, combine flour, salt, baking soda, baking powder, and cinnamon and whisk until combined. Gently add dry ingredients to wet ingredients. Fold in grated zucchini and optional nuts.
Pour into 2 greased bread tins.
Bake at 350°F for 1 hour.
You can frost with cream cheese frosting or eat as is. Either way it is delicious!
