Gluten Free Sweet Broccoli, Cauliflower, Bacon Salad

You won’t be able to stop eating this gluten free salad. The sweet and savory complement each other so well in this delicious gluten free salad!

Ingredients

  • 1 head cauliflower, chopped in bite size pieces
  • 2 heads broccoli, chopped in bite size pieces
  • 1 red onion, diced
  • Dressing:
  • ½ cup mayonnaise (Recommended brand, Best Foods)
  • 1/4 cup sugar, granulated
  • 1/8 cup vinegar
  • Add just before serving:
  • 1 cup sunflower seeds, roasted
  • ½ pound bacon, cooked and crumbled
  • 1 package of dried cranberries (Recommended brand, Craisins)

Steps

Combine broccoli, cauliflower and onion and place in gallon sized plastic bag with seal.  In small bowl make dressing and pour over vegetables into bag.  Seal bag and place in container in refrigerator for 8 hours ideally but at least for 1 hour.

Remove from bag and spoon into bowl.  Add sunflower seeds, bacon and cranberries..
