Ingredients
- 2 egg whites, beaten
- 4 skinless, boneless chicken breasts
- ½ c. gluten free bread crumbs (Recommended brand, Kinnikinnick Bread Crumbs)
- 4 Tbs. olive oil
- 2 cups gluten free spaghetti sauce (Recommended brand: Barilla Tomato and Basil)
- OR see below 2 homemade spaghetti sauce recipes*
- ½ cup mozzarella cheese, grated
- 1 Tbs. parmesan cheese
- 1 Tbs. parsley
Steps
Dip chicken in egg, coat with gluten free bread crumbs. Place olive oil in skillet and melt on medium heat. Add chicken and cook in skillet 10-15 minutes until browned. Drain grease. Add spaghetti sauce and heat to boiling. Reduce heat. Cover and cook 10 minutes more or until chicken is no longer pink.
Top chicken with mozzarella cheese, parmesan and parsley.
Serve with gluten free spaghetti noodles. See directions below.
Gluten Free Noodles
1 bag gluten free spaghetti noodles (recommended brands: Tinkyada Brown Rice Noodles)

Fill a large cooking pot with water. Add olive oil and salt with the water. Bring to a boil and add spaghetti noodles carefully without splashing hot water out of pot. Cook until noodles are completely soft. Drain and serve with spaghetti sauce recipe, just butter or butter and shredded cheese.
*Classic Homestyle Spaghetti Sauce
1-pound ground beef
2 teaspoons fresh garlic, minced
1 yellow onion, diced
5 mini peppers, diced
1-14 ounce can tomato sauce
1-14 ounce can tomatoes, diced
6 large mushrooms, sliced
1 cup beef broth
½ teaspoon ground pepper
½ teaspoon salt
2 teaspoons oregano
2 teaspoons basil
1 teaspoon thyme
1 Tablespoon brown sugar
Heat ground beef, garlic, onion and peppers in frying pan until beef is browned and onions are translucent. Add all the remaining ingredients and bring to a boil, then turn temperature down to simmer for 15-30 minutes, stirring regularly.
*Spaghetti Sauce – Quick and Easy
1 can tomato sauce
2 Tablespoons dried Italian Seasoning
1 Tablespoon brown sugar
¼ teaspoon salt
¼ teaspoon ground pepper
Combine all ingredients and bring to boil. Reduce temperature to simmer for 15 minutes.
