Ingredients
- 2 cups granulated sugar
- 1 cup canola oil
- 4 eggs
- 2 cups pumpkin ( 1 small can, 15 ounces)
- 2 teaspoons gluten free baking powder
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 cups gluten free flour mixture – Recommended brands for this recipe Bob’s Red Mill Gluten Free 1 to 1 Flour
- 2 teaspoons ground cinnamon

Pre-heat oven to 350° F.
Beat sugar, oil and eggs in mixer until well combined.

Combine in separate bowl: gluten free baking powder, soda, salt, gluten free flour mixture and cinnamon.

Add dry ingredients into the pumpkin mixture and thoroughly mix.

Spoon onto greased jelly roll pan 12×17 inches.
Bake for 25 minutes. Test if cake is done by inserting toothpick in center of cake. Cake is done when toothpick comes out clean.

Frost with gluten free cream cheese frosting.
