Gluten Free Taco Bowls

This is such a simple, quick meal that looks like you’ve spent hours on it. It is not only really good, it also looks very appealing when presented and served.

Ingredients

  • 4 cups rice, brown or white, cooked
  • 1 pound ground beef
  • 1 Tablespoon cumin
  • 1 yellow onion, diced
  • 1 can black or pinto beans, drained (Recommended brand: S&W)
  • 2 cups cheddar cheese, shredded
  • 2 tomatoes, diced
  • Optional add-ins to make your dish super fabulous:
  • 2 avocados, sliced
  • Salsa (Recommended brand: Mateo’s)
  • Gluten free sour cream (Recommended brand, Daisy)

Steps

Cook rice in rice cooker or on stove. 

In skillet or electric frying pan cook ground beef along with cumin and diced onion until meat is browned and onion is translucent.

In saucepan warm beans and bring to a simmer. 

Spoon tomatoes, cheese, avocados and salsa into small bowls.  In larger bowls spoon rice, ground beef and beans.

Serve in individual serving bowls. Layer rice, ground beef, beans, cheese, tomatoes, avocado, salsa and sour cream.

Tip: This recipe easily doubles if you need to serve more people
