Gluten Free Chocolate Chip Pumpkin Bread

Want to take your gluten free pumpkin bread to a new level? Yes? Then add some chocolate chips! Or some white chocolate chips, chopped walnuts or pecans. Whatever sounds yummy, through it in!

Ingredients

  • 3 cups canned pumpkin (1 large can – 29 ounces)
  • 2 2/3 cups sugar
  • 3/4 cup canola oil
  • 4 cups gluten-free flour mix – Recommended for this recipe Cup4Cup Multipurpose Flour or Namaste Foods – Perfect Gluten Free Flour Blend
  • 3 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2 cups chocolate chips
  • Optional: 1 cup chopped walnuts
  • Optional: 2 cups raisins

Steps

Pre-heat oven to 350° F . Grease 3 bread pans with oil

Combine in mixer: pumpkin, sugar and oil. Mix until combined.

Combine in separate bowl: gluten free flour, gluten free soda, cinnamon and cloves. Gradually add dry ingredients into the pumpkin mixture and mix thoroughly.

Fold in chocolate chips. Optionally: fold in nuts and/or raisins.

Bake for 40-50 minutes until toothpick inserted in the center comes out clean.
