Ingredients
- 2 cups gluten free flour mix (Recommended brands, Bob’s Red Mill 1:1, King Arthur Measure for Measure)
- 2 teaspoons gluten free baking powder (Recommended brands, Bob’s Red Mill, Argo)
- 1 teaspoon salt
- 4 Tablespoons sugar
- 4 eggs
- 2- 1/2 cups milk
- 1/2 cup olive oil
Steps
Combine all dry ingredients in medium sized bowl and whisk. Add eggs, milk and oil until all combined. Heat frying pan with scant covering of oil on medium heat. Pour batter to thinly cover entire pan. Move frying pan in circular motion to coat entire pan. Cook until you can flip the crepe.
Serve with real whipped cream and blueberries or any other fruit of your choice.
