Gluten Free Quinoa, Nut Granola

This makes a delicious warm breakfast cereal. If you decide to not bake the granola, you can just warm a bowl of it up and devour it. Either way it is so satisfying!

Ingredients

  • 2 Tablespoons liquid coconut oil
  • 2 Tablespoons pure maple syrup
  • 1/8 teaspoon salt
  • 1 cup red quinoa, cooked
  • 1 cup shredded coconut
  • ¼ cup pecans, roasted, chopped
  • ¼ cup peanuts, roasted

Steps

Cook quinoa according to instructions on bag. Drain.

Preheat oven to 250°F.

In a small bowl combine coconut oil, maple syrup and salt. Stir until combined. In separate bowl combine cooked quinoa, shredded coconut and nuts. Stir until combined. Add oil, sugar, syrup and salt to quinoa, shredded coconut and nuts and stir to combine.  On parchment covered baking sheet, spoon granola in an even layer.

Bake for 30-45 minutes stirring every 15 minutes. Watch that you do not overbake this granola or the quinoa will become really hard.

Alternatively – Don’t bake the granola and just serve it warm with milk. It is just as delicious.
