Gluten Free Classic Pancakes

These are the ultimate gluten free pancakes that are not gummy. The key is the ground rice flour. It makes the best gluten free pancakes of all time.

Ingredients

  • 1 cup ground rice flour (Grind your own or Recommended brand, Bob’s Red Mill Ground Rice Flour)
  • 1 Tablespoon Gluten free flour mix (Recommended brands: Namaste’s Perfect Flour Blend or Bob’s Red Mill 1:1,)
  • 2 teaspoons baking powder (Recommended brands: Clabber Girl, Bob’s Red Mill, Argo)
  • 1/4 teaspoon salt
  • 1 Tablespoons sugar
  • 1 Tablespoon olive oil
  • 1 cup milk
  • 1 egg, beaten

Steps

In a medium-sized bowl, mix dry ingredients together with a whisk.  Add egg, oil and milk, and whisk together until flour is moistened and batter is slightly lumpy.  

In frying pan, spray to coat with avocado oil.  Pre-heat frying pan to medium heat. Pour pancake mixture in 5-inch circles.  Continue to cook pancake and flip over when browned on bottom and can hold its shape. 

Serve with 100% pure maple syrup
