Ingredients
- 1 cup ground rice flour (Grind your own or Recommended brand, Bob’s Red Mill Ground Rice Flour)
- 1 Tablespoon Gluten free flour mix (Recommended brands: Namaste’s Perfect Flour Blend or Bob’s Red Mill 1:1,)
- 2 teaspoons baking powder (Recommended brands: Clabber Girl, Bob’s Red Mill, Argo)
- 1/4 teaspoon salt
- 1 Tablespoons sugar
- 1 Tablespoon olive oil
- 1 cup milk
- 1 egg, beaten
Steps
In a medium-sized bowl, mix dry ingredients together with a whisk. Add egg, oil and milk, and whisk together until flour is moistened and batter is slightly lumpy.
In frying pan, spray to coat with avocado oil. Pre-heat frying pan to medium heat. Pour pancake mixture in 5-inch circles. Continue to cook pancake and flip over when browned on bottom and can hold its shape.
Serve with 100% pure maple syrup
