Ingredients
- Arugula salad greens
- 2 cans chicken (Recommended brand, Kirkland Signature Chicken Breast Chunk)
- Or 2 chicken breasts, cooked and chopped
- 2 large avocados, chopped
- 2 mangos, diced
- 1 cup blueberries
- Dressing:
- ½ cup coconut milk
- 2 teaspoons lime juice
- ½ teaspoon ginger, ground
- Red pepper flakes, pinch
- Ground salt and pepper to taste
Steps
On serving dish, layer arugula, chicken, avocados, mangos and blueberries.
In small bowl, combine dressing ingredients and whisk to combine. Drizzle over salad and serve.
