Ingredients
- Salad greens of your choice, chopped
- 1 pound ground beef
- 1 yellow onion, diced
- 2 cups mini sweet peppers, chopped
- 1-15 ounce can black beans, (Recommended brand, SW)
- 2 tomatoes, diced
- 1 cup cheese, grated
- Avocado, diced
- Salsa (Recommended brands, Mateo’s Gourmet Salsa, Newmans Mild Salsa)
- Taco chips, gluten free (Recommended brands, Siete Lime Chips, Juanita’s)
- Top with your favorite ranch dressing.
Steps
Cook ground beef, onion and mini sweet peppers in frying pan until ground beef browned, onions are translucent and pepper are softened.
Cook black beans in saucepan until warmed.
Individually, layer salad plates with greens, beans, ground beef mixture, tomatoes, shredded cheese, avocado, salsa and gluten free taco chips.
