Ingredients
- Chicken
- 4 large chicken breasts
- ! cup gluten free flour (Recommended brands: Bob’s Red Mill 1:1, King Arthur Measure for Measure)
- ¾ teaspoon garlic salt
- Ground pepper to taste
- Oil olive
- Sauce:
- 3/4 cup brown sugar
- ½ cup chicken broth
- 4 Tablespoons ketchup (Recommended brand: Hunts 100% Natural Tomato Ketchup)
- 1 Tablespoon red wine vinegar
- 1 Tablespoon gluten free tamari sauce (Recommended brand: San J brand)
- Dash of salt
Steps
Pre-heat oven to 350° F.
Combine gluten free flour, garlic salt and ground pepper.
Cut chicken into bite sized pieces and coat in gluten free flour, garlic salt and pepper. In frying pan, heat olive oil to medium heat and add chicken. Brown chicken on all sides and cook until no longer pink in center, and meat reaches 165°F.
Sauce:
In a saucepan, combine ingredients and bring to a low boil. Boil for a couple of minutes until thickened.
Place chicken in large, greased, casserole dish. Pour sauce over chicken. Cover with foil. Bake until sauce is bubbly approximately 30 -40 minutes.
