Ingredients
- 3 large chicken breasts, thawed
- 5 Tablespoons olive oil
- 1 ½ cup gluten free flour mix (Recommended brand, Bob’s Red Mill 1:1 or King Arthur’s Measure for Measure)
- 1 Tablespoon seasoning salt
- ½ teaspoon chili powder
Steps
With scissors cut thawed chicken breasts into bite-sized pieces. Combine gluten free flour and seasoning salt on a plate. Add chicken chunks to gluten free flour mixture and with a spoon coat all the chicken pieces. In a skillet or electric frying pan, add olive oil and set for medium heat. Place chicken pieces in skillet or electric frying pan and fry until chicken is cooked through and golden browned. An instant-read thermometer inserted into the center should read at least 165° and chicken should no longer be pink in center.
Serve immediately while hot.
