Ingredients
- 2 cups sugar, granulated
- 1 cup olive oil
- 4 eggs
- 2 cups gluten free flour mix (Recommended brand, Namaste Perfect Flour Blend, Bob’s Red Mill 1:1)
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 3 cups carrots, shredded
Steps
In mixer beat sugar, oil and eggs until fluffy. In a separate bowl, combine all dry ingredients, gluten free flour, salt, soda and cinnamon and whisk. Add dry ingredients to wet ingredients in mixer. Beat until combined but do not overbeat. Add shredded carrots and mix until combined.
Grease a 9×13 inch cake pan with a cooking spray that is gluten free, (olive oil or avocado are good options- Recommended brand, Chosen Foods Avocado Spray). 2Spoon cake batter into cake pan.
Bake at 350°F for 40-45 minutes.
Frost with cream cheese frosting.

- 3 Tablespoons butter, softened
- 1 teaspoon 100% pure vanilla
- 5 cups powdered sugar
- 3 1/2 Tablespoons milk
Steps
In mixer. beat cream cheese until smooth. Add butter and pure vanilla mixing until combined. Gradually add powdered sugar, mixing well. Add milk until desired consistency.
